Preparation Steps
 

  1. Prepare the Meat Mixture:
    In a large mixing bowl, combine ground meat and fat. Ensure the fat is finely minced or ground for even incorporation.
    Add salt, black pepper, garlic powder, onion powder, paprika, and any other desired spices to the meat mixture.

     

  2. Incorporate PRESOL PS 4906:
    Measure 5 g of PRESOL PS 4906 based on the total weight of the meat mixture.
    Add PRESOL PS 4906 directly to the meat mixture before incorporating spices.
    Mix thoroughly to ensure even distribution of the preservative throughout the meat mixture.

     

  3. Form Sausages:
    If making sausages, stuff the seasoned meat mixture into casings using a sausage stuffer.
    Twist sausages into desired lengths and tie off ends securely.

     

  4. Cooking (Optional):
    If cooking immediately, grill or pan-fry the sausages until they reach an internal temperature of 75 °C (165 °F).
    Alternatively, you can smoke or bake them according to your preference.

     

  5. Storage:
    Pack the sausages or processed meats in vacuum-sealed bags or airtight containers.
    Store at frozen temperatures of 0 to 4 degrees Celsius until ready to use.
    Once opened for consumption, store at refrigeration temperatures of 5 to 8 degrees Celsius.
